Slow Food ~ The Healthy Alternative to Fast Food

Alice Waters is a pioneer. She's been preaching the virtues of cultivating fresh food for decades. Lesley Stahl interviews this world-renowned chef and restaurateur. Alice Waters hopes a slower approach to the food we eat will keeps us healthier and greener.

"Alice and Chez Panisse have become convinced that the best-tasting food is organically grown and harvested in ways that are ecologically sound, by people who are taking care of the land for future generations. The quest for such ingredients has largely determined the restaurant's cuisine. Chez Panisse has tried for years to make diners here partake of the immediacy and excitement of vegetables just out of the garden, fruit right off the branch, and fish straight out of the sea. In doing so, Chez Panisse has stitched together a patchwork of over sixty nearby suppliers, whose concerns, like the restaurant's, are environmental harmony and optimal flavor."

Chez Panisse is located in Berkeley, California, but Alice Water's influence extends far beyond.

Absolutely incredible video, Marilyn! I watched the whole thing. It is so fantastic what Alice is doing and something I totally agree with. Kids today just don't understand 'slow food' at all and I do believe it could be one of the answers to the obesity issue our nation is facing. Thank you for sharing it.

Great video Marilyn. For quite a few years I nearly quit cooking, we ate out a lot. The last few years, and especially since moving where we are now, far from town, I have been cooking again. Amazing what you can put together that is healthy, tasty, and there is a real satisfaction in putting it together. Thanks for the post!

Have you read "In Defense of Food: An Eater's Manifesto"? It goes right along with this post. Basically, the premise is that all of the emphasis on diet and nutrition isn't actually helping anyone be healthier b/c we're not eating the real food that God made for our bodies. If we just eat real (slow) food, then our bodies will get what they need. I highly recommend it.

After spending 20 years of summers out in the yard – planting flowers and vegetables, watering, weeding and reaping the harvest – I’m now going green with the realization that we need to take care of ourselves, our families and the earth. So, now I’m into a more natural lifestyle. I’m still eating lots of fruits and vegetables, even though they’re not coming from my garden. The big change is eating less processed foods and faithfully taking my vitamins.

It didn’t happen overnight. It was a series of little changes that added up to a healthy lifestyle. And it doesn’t stop here. I continue to reevaluate and make little changes. So, it’s true, the only constant is change.

I'm a full time caregiver for my mom, who's no longer independent. And I support myself with a home business.

I believe we all need to continue to learn and grow. So, I got a computer when they started to be sold to regular folk. And I embraced the Internet when the best I could do was email. It's been a great ride and now here I am - Blogging!
